Amazing Chia Seeds


Curious about Chia Seeds?


Chia Seeds have been claimed to be a dieters dream come true. They are very versatile as they can be used in many recipes sweet or savoury.
I personally enjoy eating them in smoothies and added to yoghurt for breakfast as they act as a thickening agent keeping me feel full and energised. I buy mine online at Huckleberry farms.

There are so many health benefits of Chia that I could go on forever, but here are just a few good reasons why you should incorporate Chia seeds into your diet:
1.    Chia Seeds increase their size and weight in water and form a gel-like consistency.  When added to smoothies, milk, or yoghurt etc they will help you feel full for longer.
2.   The rich fibre content in chia slows the conversion of carbohydrate to sugar and provides a slow release of energy which helps to stabilise your blood sugar levels and reduces cravings. This can lower your risk for type 2 diabetes and also ensures you have a consistent energy throughout the day.
3.   Chia is the richest plant source of Omega 3 essential fatty acid. Omega-3 oils are super important in our diets as they promote good blood flow, improve hormonal balances, reduce inflammation in the blood vessels, improves our moods, and overall, its important in heart and cholesterol health.
4.   Chia is a complete protein with all eight amino acids.  Protein is essential for our bodies to build and repair tissues, build bones, muscles, skin and blood.  It’s important that we have protein every day as our bodies don’t store it. Furthermore, because it’s a complete protein, it helps you to feel energised all day.
5.   Apparently, "Chia" is the Mayan word for strength and is used by some athletes as endurance food. Because of the excellent absorbency of Chia Seeds, they can help you prolong hydration and retain electrolytes.
6.    Chia is an excellent source of gluten free wholegrain that can be eaten raw, directly from the packet, without grinding or cooking.


Here are some of my favourite recipes using Chia Seeds.


Cane sugar-free berry & Chia Seed Jam




Ingredients:
3 cups raspberries or blueberries
½ cup honey or agave
¼ cup of water
2 tablespoon lemon juice
3 tablespoons chia seeds
Directions:

1.Place the berries, honey or agave, and water in a pan and cook on medium to medium high heat for about 10 to 15 minutes.

2. Stir the mixture often and make sure it is not sticking and burning because all the moisture had been reduced. Add a little more water if needed while reducing the berries. It is ready when the berries have broken down, released their liquid and the mixture had become much thicker.

3. Remove from heat and add the lemon juice and chia seeds and stir well. Let it cool a little then spoon into jars and set on the counter to cool. When cool cover and refrigerate until ready to eat.

 Chocolate Mousse and Strawberries


 Ingredients: 
3 Tbsp Coconut Water
2 tsp Chia Seeds
2 Tbsp Maple Syrup
2 Tbsp Raw Cacao Powder
1 Cup Coconut Meat
pinch Sea Salt
½ Cup Strawberries, sliced

Place coconut water, chia seeds and maple syrup in a blender. Let stand for 10 minutes, allowing chia seeds to bloom.

Add coconut meat, cacao powder and sea salt. Blend until smooth and creamy.

Spoon into 2 wine glasses and garnish with strawberries.

This can be made 24 hours in advance.

Getting crafty with paper!


I just wanted to share with you a few little crafty things I’ve been up to lately…

Yesterday was such a beautiful sunny day it reminded me of summer and BBQ's! These firework fans are so cute and super easy to make!



These paper pinwheels are also really easy and fun and they look great for kids party decorations!  


The picture below shows how I used them at my daughters party



Pretty as a picture...



I recently received a three months  supply of cereal from Hubbard's... yum, yum, yum... and have ended up with lots of left over cereal boxes... so I thought why not cover them in pretty paper and use them for storing the kids craft paper, books, pens and pencils...



For my daughters birthday party I made my own cupcake wrappers so that the colours could match her theme... I laminated them so they can be used again... here's how they turned out.

Gorgeous print "once upon a time" from society6, Pretty Louis Vuitton frames linkLV, I found the cupcake stand at new world and made a delicious banana, honey and cinnamon cupcake (see recipie below), then I made the cupcake wrapper using a template, scrapbook card and I even laminated it for future use! The cute dinner set is from The love mae collection, and the absolutely cute cute cute crochet toy is from Emerson-J

Recipe for Banana Cupcakes with Honey-Cinnamon Frosting - from: Martha Stewart



Ingredients

 1 1/2 cups all-purpose flour, (spooned and leveled)
·         3/4 cup sugar
·         1 teaspoon baking powder
·         1/2 teaspoon baking soda
·         1/4 teaspoon salt
·         1/2 cup (1 stick) unsalted butter, melted
·         1 1/2 cups mashed bananas (about 4 ripe bananas), plus 1 whole banana, for garnish (optional)
·         2 large eggs
·         1/2 teaspoon pure vanilla extract
·         Honey-Cinnamon Frosting

Directions

1.     Preheat oven to 350 degrees. Line a standard 12-cup muffin pan with paper liners. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2.     Make a well in center of flour mixture. In well, mix together butter, mashed bananas, eggs, and vanilla. Stir to incorporate flour mixture (do not overmix). Dividing evenly, spoon batter into muffin cups.
3.     Bake until a toothpick inserted in center of a cupcake comes out clean, 25 to 30 minutes. Remove cupcakes from pan; cool completely on a wire rack. Spread tops with Honey-Cinnamon Frosting. Just before serving, peel and slice banana into rounds, and place one on each cupcake, if desired.

Recipe for Honey –Cinnamon Frosting

Ingredients

·         1 1/4 cup confectioners' sugar
·         1/2 cup (1 stick) unsalted butter, room temperature
·         1 tablespoon honey
·         1/8 teaspoon ground cinnamon

Directions

1.     In a medium bowl, using an electric mixer, beat confectioners' sugar, unsalted butter, honey, and ground cinnamon until smooth, 4 to 5 minutes.

Nutrition update - Health & Fitness

Three ways with Kale


Anyone else notice the recent hype about Kale?? 

Apparently, Kale is filled with heaps of nutrients, powerful antioxidants, vitamins, folate, magnesium, iron, vitamin A, K, C, calcium… the list goes on!  Its even been claimed that Kale can help improve your skin, metabolism, lower cholesterol levels, and is an good detox food.  Sounds too good to be true!

It sounded so amazing that I just had to try it for myself!  I bought 1.5kg of organic kale from Huckleberry Farms http://www.huckleberryfarms.co.nz awesome shop, they delivered it to my straight to my door the very next day.

I made this juice, which was actually really nice! I even got my 4 year old daughter to drink it!  I used my juicer to juice a bunch of Kale leaves, 2 granny smith apples, and celery.  Talk about healthy!! And  it actually tasted really good, it left a nice fresh, clean and healthy feel.


I’ve come across a few smoothie recipes with blueberries and bananas so I might have to give those a go too.

I also made a Kale salad – in this I added grilled chicken, mushrooms, red onion, walnuts, and feta.  Then I sprinkled some salt, tarragon, pepper and apple cider vinegar.  This was also really delicious.  




Then, to top it all off I made some kale chips.  These were really easy and my kids even dug into them!

 

All you need to do is:


 1.       Preheat the oven to 180 degrees, line an oven tray with baking paper


2.       Wash and thoroughly dry Kale (about a bunch)


3.       Chop the Kale leaves off the steams and cut into little pieces


4.       Drizzle oil with olive oil – or spray with cooking spray


5.       Spinkle with salt


6.       Bake until the edges brown (but don’t burn) – approximately 10 minutes
 


A few tips… you can use any seasoning you like just don’t use too much salt, keep an eye on them as they start to brown pretty quickly.  

These are really easy, simple, and quick to whip up when you get the munchies!
