Cheers to Ranga!

This one's for you guys!




Well because I'm just too happy for my friends who have created and launched an alcoholic ginger beer  - Ranga, I thought... what better way to celebrate Saturday night drinks than to have it "Ranga Style".  Here are some photos taken by Hunter....

Mmmmm Cheesecake!!

Maple Syrup with Roasted Pears -  Cheesecake





If you've seen my recent facebook post you'll see that I have a new found love for cheesecakes! Growing up as a kid I was never too keen on cheesecakes, but I have recently discovered the true delicacies of this decadent dessert.

Last week I made a beautiful Pistachio-Honey baked cheesecake.  I added Pistachio Gelato and extra chopped pistachios to the top, soooo divine!  But today, I wanted to try a no-bake cheesecake.  I found this delicious recipe for "Maple Cheesecake with Roasted Pears". It was so dam good that I can't wait to make another one!

The recipe was very easy, I've added it below.

First thing to do is make the base, crush up some malt biscuits, add sugar and melted butter then press into your spring-form pan, and put it in the oven at 180 degrees (celsius) for approx 12 minutes.






Once the cheesecake crust is ready, put it aside to cool down.  In the mean time you can prepare the roasted pears.  Grab two Bosc Pears, slice length-wise, brush with Maple Syrup, place on baking paper, and roast on approx 230 degrees for about 20 minutes.  Then brush with more Maple syrup and grill for about 4 minutes turning frequently.





 Now for the cheesecake... very easy! Beat cream cheese on high until fluffy, add maple syrup and beat until smooth. In a separate bowl beat cream and sugar, then stir about one third of the cream mixture into the cream cheese and fold in the rest.  Pour into the base, and refrigerate for about 3 hours.







Arrange the pears on top before serving... and viola!! Your beautiful cheesecake!!







Recipes... 

Cheesecake:

Ingredients

2 packets of cream cheese (approx 500g), room temperature

  • 3/4 cup pure maple syrup
  • 1 cup cold heavy cream
  • 2 tablespoons caster' sugar
  • 1 Pie-Crust made in a 22cm springform pan with malt biscuits
  • Nonstick cooking spray
  • 2 medium pears, such as Bosc or Bartlett, sliced lengthwise

Directions


  1. In a large bowl, using an electric mixer, beat cream cheese on high until fluffy, about 3 minutes. Add 1/2 cup maple syrup; beat until smooth. In a medium bowl, beat cream and sugar on high until soft peaks form, about 3 minutes. With a rubber spatula, stir about one-third the whipped cream into cream cheese mixture, then fold in remainder. Transfer to crust and refrigerate until firm, 3 hours (or up to 1 day).
  1. Preheat oven to 230 degrees. Coat a parchment-lined rimmed baking sheet with cooking spray. Arrange pear slices in a single layer on sheet and brush with 2 tablespoons maple syrup. Roast until pears are soft, 20 minutes. Turn on the grill. Brush pears with 2 tablespoons maple syrup and grill for about 4 minutes, rotating sheet frequently. Let cool. To serve, arrange pear slices, overlapping slightly, on cheesecake.

Biscuit Base

Ingredients

  • 6 ounces cookies (about 12 graham crackers, 46 vanilla wafers, or 30 chocolate wafers, such as Famous)
  • 3 tablespoons sugar
  • 1/4 teaspoon coarse salt
  • 5 tablespoons unsalted butter, melted

Directions

  1. Preheat oven to 350 degrees. In a food processor, pulse cookies until finely ground (you should have about 1 1/2 cups). Add sugar, salt, and butter and pulse until combined.
  2. Firmly press crumb mixture into bottom and up sides of a 9-inch pie plate. (If using a springform pan, press crumbs halfway up sides.) Bake until crust is dry and set, about 12 minutes. Let cool completely in plate on a wire rack before filling.

Mid-winter Christmas Party?

Is anyone planning a midwinter Christmas party? We don't get to experience a winter Christmas here in New Zealand - although our summer sometimes feels like winter! So having a mid-winter Christmas party is a bit of a novelty.  I've found some mid-winter party inspiration for anyone planning on celebrating winter.

Mulled wine in a must! There are number of recipes out there, I found this one at Taste. Just alter the recipe to suit number of guests


Ingredients (serves 4)

10 cloves
2 cinnamon sticks
1/4 cup caster sugar
1 roughly grated nutmeg
2 cups water
roughly grated rind of 1 orange
1 roughly chopped apple (skin on)
750ml light, fruity red wine (e.g. merlot)

Method
  1. Heat cloves, cinnamon, sugar, nutmeg, water, orange rind and apple in a large saucepan over medium heat.  Bring to the boil, then reduce heat to low and simmer for 10 minutes.
  2. Add red wine and simmer for another 5 minutes.  Remove from heat. Strain and divide among serving glasses.  Serve immediately.

Amazing Chia Seeds


Curious about Chia Seeds?


Chia Seeds have been claimed to be a dieters dream come true. They are very versatile as they can be used in many recipes sweet or savoury.
I personally enjoy eating them in smoothies and added to yoghurt for breakfast as they act as a thickening agent keeping me feel full and energised. I buy mine online at Huckleberry farms.

There are so many health benefits of Chia that I could go on forever, but here are just a few good reasons why you should incorporate Chia seeds into your diet:
1.    Chia Seeds increase their size and weight in water and form a gel-like consistency.  When added to smoothies, milk, or yoghurt etc they will help you feel full for longer.
2.   The rich fibre content in chia slows the conversion of carbohydrate to sugar and provides a slow release of energy which helps to stabilise your blood sugar levels and reduces cravings. This can lower your risk for type 2 diabetes and also ensures you have a consistent energy throughout the day.
3.   Chia is the richest plant source of Omega 3 essential fatty acid. Omega-3 oils are super important in our diets as they promote good blood flow, improve hormonal balances, reduce inflammation in the blood vessels, improves our moods, and overall, its important in heart and cholesterol health.
4.   Chia is a complete protein with all eight amino acids.  Protein is essential for our bodies to build and repair tissues, build bones, muscles, skin and blood.  It’s important that we have protein every day as our bodies don’t store it. Furthermore, because it’s a complete protein, it helps you to feel energised all day.
5.   Apparently, "Chia" is the Mayan word for strength and is used by some athletes as endurance food. Because of the excellent absorbency of Chia Seeds, they can help you prolong hydration and retain electrolytes.
6.    Chia is an excellent source of gluten free wholegrain that can be eaten raw, directly from the packet, without grinding or cooking.


Here are some of my favourite recipes using Chia Seeds.


Cane sugar-free berry & Chia Seed Jam




Ingredients:
3 cups raspberries or blueberries
½ cup honey or agave
¼ cup of water
2 tablespoon lemon juice
3 tablespoons chia seeds
Directions:

1.Place the berries, honey or agave, and water in a pan and cook on medium to medium high heat for about 10 to 15 minutes.

2. Stir the mixture often and make sure it is not sticking and burning because all the moisture had been reduced. Add a little more water if needed while reducing the berries. It is ready when the berries have broken down, released their liquid and the mixture had become much thicker.

3. Remove from heat and add the lemon juice and chia seeds and stir well. Let it cool a little then spoon into jars and set on the counter to cool. When cool cover and refrigerate until ready to eat.

 Chocolate Mousse and Strawberries


 Ingredients: 
3 Tbsp Coconut Water
2 tsp Chia Seeds
2 Tbsp Maple Syrup
2 Tbsp Raw Cacao Powder
1 Cup Coconut Meat
pinch Sea Salt
½ Cup Strawberries, sliced

Place coconut water, chia seeds and maple syrup in a blender. Let stand for 10 minutes, allowing chia seeds to bloom.

Add coconut meat, cacao powder and sea salt. Blend until smooth and creamy.

Spoon into 2 wine glasses and garnish with strawberries.

This can be made 24 hours in advance.

Getting crafty with paper!


I just wanted to share with you a few little crafty things I’ve been up to lately…

Yesterday was such a beautiful sunny day it reminded me of summer and BBQ's! These firework fans are so cute and super easy to make!



These paper pinwheels are also really easy and fun and they look great for kids party decorations!  


The picture below shows how I used them at my daughters party



Pretty as a picture...



I recently received a three months  supply of cereal from Hubbard's... yum, yum, yum... and have ended up with lots of left over cereal boxes... so I thought why not cover them in pretty paper and use them for storing the kids craft paper, books, pens and pencils...



For my daughters birthday party I made my own cupcake wrappers so that the colours could match her theme... I laminated them so they can be used again... here's how they turned out.

Gorgeous print "once upon a time" from society6, Pretty Louis Vuitton frames linkLV, I found the cupcake stand at new world and made a delicious banana, honey and cinnamon cupcake (see recipie below), then I made the cupcake wrapper using a template, scrapbook card and I even laminated it for future use! The cute dinner set is from The love mae collection, and the absolutely cute cute cute crochet toy is from Emerson-J

Recipe for Banana Cupcakes with Honey-Cinnamon Frosting - from: Martha Stewart



Ingredients

 1 1/2 cups all-purpose flour, (spooned and leveled)
·         3/4 cup sugar
·         1 teaspoon baking powder
·         1/2 teaspoon baking soda
·         1/4 teaspoon salt
·         1/2 cup (1 stick) unsalted butter, melted
·         1 1/2 cups mashed bananas (about 4 ripe bananas), plus 1 whole banana, for garnish (optional)
·         2 large eggs
·         1/2 teaspoon pure vanilla extract
·         Honey-Cinnamon Frosting

Directions

1.     Preheat oven to 350 degrees. Line a standard 12-cup muffin pan with paper liners. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2.     Make a well in center of flour mixture. In well, mix together butter, mashed bananas, eggs, and vanilla. Stir to incorporate flour mixture (do not overmix). Dividing evenly, spoon batter into muffin cups.
3.     Bake until a toothpick inserted in center of a cupcake comes out clean, 25 to 30 minutes. Remove cupcakes from pan; cool completely on a wire rack. Spread tops with Honey-Cinnamon Frosting. Just before serving, peel and slice banana into rounds, and place one on each cupcake, if desired.

Recipe for Honey –Cinnamon Frosting

Ingredients

·         1 1/4 cup confectioners' sugar
·         1/2 cup (1 stick) unsalted butter, room temperature
·         1 tablespoon honey
·         1/8 teaspoon ground cinnamon

Directions

1.     In a medium bowl, using an electric mixer, beat confectioners' sugar, unsalted butter, honey, and ground cinnamon until smooth, 4 to 5 minutes.
